
I made bone broth in the slow cooker the other day without any real plan for what to do with it. At the very least, I imagined sipping it throughout the week and soaking in all its benefits.

The bottom line about bone broth is that it’s supercharged in its health benefits and is an ancient food used by traditional cultures as an affordable source of nutrients. And these days it is the latest “wellness trend” as we rediscover tried and true foods of our ancestors. You can even get bone broth in cup to go in NYC at Brodo – I need to check it out~! There are also some great sources of boxed bone broth if you don’t want to spend hours making your own. And if you’re not a meat-eater, I made a vegan healing broth that was pretty delicious!
I grew up with a traditional soup of Korean oxtail soup and bone soup. But I made this bone broth in a different style, using western aromatics (leeks, carrots, garlic, herbs). There are so many different recipes to explore, but when I took a look at the dark brown broth in my slow cooker, my belly told me it wanted french onion soup. So as usual I listened.
The only french onion soup I’ve ever had were at classic old-school diners and it never occurred to me to attempt to make it at home. Since I don’t do well with most dairy I wondered if this soup would be the same without the oozy cheese covering the bowl with bread floating in the broth. And the answer is YES – there’s always something for everyone on internet.
I found a very simple onion soup from Dr. Axe’s site using onions, garlic and bone broth but I am sure any beef broth will do! Not only does this soup have the goodness the broth, but the onions and garlic add their own medicinal benefits.
And most importantly this soup is tasty and full of flavor even without the toast and gooey cheese. This would be a great soup for the winter season to ward off colds or soothe one.
Here’s a slightly adapted recipe to accommodate what I had in my pantry if you want to try it out!

Onion Soup with Bone Broth
INGREDIENTS:
- 4 large onions, peeled and thinly sliced
- 2 cups chicken bone broth ( I used chicken stock)
- 2 cups beef bone broth
- 4 tablespoons ghee (I used coconut oil)
- 5 garlic cloves, chopped (I added a bit more)
- Sea salt and black pepper to taste
- A few dashes of worcestershire sauce to taste
DIRECTIONS:
- In a stock pot over medium heat, melt ghee OR coconut oil and thinly sliced onions.
- Cook onions until lightly caramelized
- Add bone broths and garlic
- Season with salt and pepper to taste
- Add a few dashes of worcestershire sauce to taste
- Bring mixture to a boil and then reduce the heat and allow to simmer for 30–50 minutes (the longer, the more flavor)
